Homemade Lime Pickles
(old recipe - Verna Williams)
1 gal. sliced cucumbers Water to cover slices
1 cup while lime 1 qt. vinegar (cider -5% acidity)
6 cups sugar 2 Tbsp. mixed pickle spices
Green cake color to give natural color.
Mix cucumbers, lime, and water to cover. Cover with plate in stone glass jar
and weight down and soak overnight.
Wash in 5 quarts water.
Bring to boil: Vinegar, sugar, pickle spice, cake color.
Boil 30 minutes, stirring once in awhile.
Add 2 Tbsp. salt and boil 5 minutes more. Seal in hot clean jars.
